The Spanish Butcher, Glasgow: audio, CCTV and network installed in the week before opening
Rusk & Rusk called Lairds in less than a week before the soft opening of their Glasgow steak restaurant. We worked nights around the other trades, hung the speakers from the containment while the resin floor went down, and had the audio, the cameras and the network running for the first guests.

Rusk & Rusk

The Spanish Butcher, Glasgow city centre

Zoned audio, DJ integration, IP CCTV, Wi-Fi, tills and network

Under a week, worked overnight
The brief
The Spanish Butcher is Rusk & Rusk’s steak restaurant in the centre of Glasgow: fine wine, the finest steaks, and a room that was designed to be looked at. The technology had to disappear into it. The audio needed to carry the atmosphere of the room whatever the crowd, take a DJ on a Saturday night, and stay out of sight; the cameras, the Wi-Fi and the tills all had to be in and working for the soft opening, and that opening was less than a week away when Lairds were called.
What we did
A city-centre site with parking restrictions, a fit-out in its final push and a fixed opening date leaves one sensible answer, and we took it: the installation was done overnight, starting at midnight, when the tradesmen had gone and the street was empty. We found ourselves on scaffolding while the resin floor was being poured beneath us, coordinating our work and our processes with the other trades so that nobody was held up.
The audio is a six-zone Nuvo system. Sonance Mariner speakers, in black, hang from containment colour-matched to the interior so that they read as part of the ceiling rather than something added to it, with ten-inch subwoofers hidden in the fabric of the room for the low end. The Saturday-night DJ feeds into the same system, so the room can change gear without a second set of equipment. Lilin IP cameras were installed to the agreed positions, and Ruckus Wi-Fi covers the restaurant for the business and for guests. We coordinated the network with the internet provider and set up the tills on it, so that the restaurant opened on one infrastructure rather than several.
The result
The restaurant opened on time with everything working and nothing on show: hidden systems, maximum effect, which is how Rusk & Rusk wanted it. When the group opened a second Spanish Butcher in Edinburgh, Lairds were asked in from the start, which is the outcome we would choose over any testimonial.
Before and after opening

What we handed over
A working restaurant on opening night: six zones of audio calibrated to the finished room, the DJ feed integrated, cameras commissioned, Wi-Fi covering the floor, and the tills and network configured on one infrastructure with the provider. The equipment is out of sight, which was the brief.
What went in
- Six-zone Nuvo audio management system
- Sonance Mariner loudspeakers in black, hung from colour-matched containment
- Hidden ten-inch subwoofers
- Audio integration for the Saturday-night DJ
- Lilin IP CCTV
- Ruckus Wi-Fi
- Network and tills configured, with ISP coordination
- Design, procurement, installation and calibration, worked overnight
Opening in a week?
We would rather be on the drawings from the start, but a restaurant that has to open will open. If the date is fixed and the technology is not in, tell us today and we will tell you what can be done by then.
